Brown Sugar and Bacon Wrapped Lil Smokies

Prep Time: 20 Minutes
Cook Time: 30 Minutes
Serves: 6 people



    • 1 Pound Bacon
    • 1 Whole (14 Oz) Cocktail Sausages
    • 1/2 Cup Brown Sugar


  1. Lay strips of bacon out on a clean, flat surface. Roll out bacon strips using a rolling pin, so they are a bit longer with even thickness. Cut bacon strips in half.
  2. Wrap each sausage in a 1/2 strip of bacon and secure with a toothpick. Place the bacon-wrapped sausages in a casserole dish in a single layer and cover with brown sugar.
  3. Transfer to the fridge and let sit for 30 minutes.
  4. When ready to cook, set the Traeger temperature to 350°F and preheat with the lid closed for 15 minutes.
  5. Lay the sausages out on a parchment lined sheet tray and place the sheet directly on the grill grate.
  6. Cook for 25 to 30 minutes until the bacon is crispy. Enjoy!

BBQ Brown Sugar Bacon Bites


Prep Time: 10 Minutes
Cook Time: 30 Minutes
Serves: 2 people


    • 1/2 Cup Brown Sugar
    • 1 Tablespoon Fennel, Ground
    • 2 Teaspoon Kosher Salt
    • 1 Teaspoon Ground Black Pepper
    • 1 Pound Pork Belly, Diced


  1. When ready to cook, set the Traeger temperature to 350°F and preheat with the lid closed for 15 minutes.
  2. Fold a 12-inch x 36-inch piece of aluminum foil in half and crimp the edges so there is a rim. Using a fork, poke holes in the bottom of the foil. This way, some of the bacon fat will be rendered out and the bacon bites will be crisp.
  3. In a large bowl, combine the brown sugar, ground fennel, salt, and black pepper. Stir to combine. Place the diced pork belly into the sugar mixture and toss until well-coated. Transfer the pork pieces to the foil.
  4. Place the foil directly on the grill grates, close the lid, and bake until the pieces are crispy, glazed, and bubbly, 20-30 minutes.
  5. Remove the bacon bites from the grill and serve warm. Enjoy!
