Brown Sugar and Bacon Wrapped Lil Smokies

- 1 Pound Bacon
- 1 Whole (14 Oz) Cocktail Sausages
- 1/2 Cup Brown Sugar
Steps
- Lay strips of bacon out on a clean, flat surface. Roll out bacon strips using a rolling pin, so they are a bit longer with even thickness. Cut bacon strips in half.
- Wrap each sausage in a 1/2 strip of bacon and secure with a toothpick. Place the bacon-wrapped sausages in a casserole dish in a single layer and cover with brown sugar.
- Transfer to the fridge and let sit for 30 minutes.
- When ready to cook, set the Traeger temperature to 350°F and preheat with the lid closed for 15 minutes.
- Lay the sausages out on a parchment lined sheet tray and place the sheet directly on the grill grate.
- Cook for 25 to 30 minutes until the bacon is crispy. Enjoy!
BBQ Brown Sugar Bacon Bites

Ingredients

- 1/2 Cup Brown Sugar
- 1 Tablespoon Fennel, Ground
- 2 Teaspoon Kosher Salt
- 1 Teaspoon Ground Black Pepper
- 1 Pound Pork Belly, Diced
Steps
- When ready to cook, set the Traeger temperature to 350°F and preheat with the lid closed for 15 minutes.
- Fold a 12-inch x 36-inch piece of aluminum foil in half and crimp the edges so there is a rim. Using a fork, poke holes in the bottom of the foil. This way, some of the bacon fat will be rendered out and the bacon bites will be crisp.
- In a large bowl, combine the brown sugar, ground fennel, salt, and black pepper. Stir to combine. Place the diced pork belly into the sugar mixture and toss until well-coated. Transfer the pork pieces to the foil.
- Place the foil directly on the grill grates, close the lid, and bake until the pieces are crispy, glazed, and bubbly, 20-30 minutes.
- Remove the bacon bites from the grill and serve warm. Enjoy!
